# Expert Advice:

01 -
  • Three glossy layers that actually stay separated, giving you something pretty to look at before they disappear.
  • Built-in fun because making them feels like a project, but it's honestly easier than mixing a single batch of brownies.
02 -
  • Gel food coloring is non-negotiable—liquid coloring adds moisture that makes the whole mixture weep and break, and you'll end up with something sticky instead of chewy.
  • Wiping your saucepan between layers might seem fussy but old marshmallow bits left behind will create grainy spots in your next color, so it's worth the five seconds.
03 -
  • Adding a tiny pinch of sea salt to each layer before you add the cereal deepens all the flavors and keeps them from tasting one-note.
  • Work quickly once your marshmallows are melted because they firm up fast, and you'll regret hesitating when you're trying to press a layer that's already starting to set.
